Levantine-style foul mdammas stands out for its rich flavor of olive oil, lemon, and garlic, and is often served as a warm, nourishing breakfast dish.

Ingredients (serves 4)

  • 2 cups cooked fava beans (canned or home-boiled)
  • 3 cloves garlic, crushed
  • Juice of 1 large lemon (or to taste)
  • 4 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and black pepper, to taste
  • Diced tomato (optional)
  • Chopped parsley, for garnish
  • Arabic (pita) bread, for serving

Instructions

  1. Warm the cooked fava beans over low heat with a little of their cooking liquid. Mash part of them with a fork, leaving some beans whole for texture.
  2. In a small bowl, mix the crushed garlic with the lemon juice and let it sit a few minutes to mellow the garlic's sharpness.
  3. Add the garlic-lemon mixture to the beans, then sprinkle in the cumin, salt, and pepper, and mix well.
  4. Drizzle olive oil on top, and add diced tomato if desired.
  5. Garnish with chopped parsley and serve hot with fresh Arabic bread.

Tip: Add chopped chili peppers or spring onions for those who like it spicy.
