Ingredients (serves 4)
- 2 cups cooked fava beans (canned or home-boiled)
- 3 cloves garlic, crushed
- Juice of 1 large lemon (or to taste)
- 4 tablespoons olive oil
- 1 teaspoon ground cumin
- Salt and black pepper, to taste
- Diced tomato (optional)
- Chopped parsley, for garnish
- Arabic (pita) bread, for serving
Instructions
- Warm the cooked fava beans over low heat with a little of their cooking liquid. Mash part of them with a fork, leaving some beans whole for texture.
- In a small bowl, mix the crushed garlic with the lemon juice and let it sit a few minutes to mellow the garlic's sharpness.
- Add the garlic-lemon mixture to the beans, then sprinkle in the cumin, salt, and pepper, and mix well.
- Drizzle olive oil on top, and add diced tomato if desired.
- Garnish with chopped parsley and serve hot with fresh Arabic bread.
